Cottage Cheese Flatbread

For the wrap:
220g (8oz) Cottage Cheese
2 Eggs
1 tsp Garlic, crushed
¼ cup Parmesan, shredded
1 tsp Italian Seasoning
For the filling:
2 slices Lean Bacon
4 slices Tomato
½ Avocado, sliced
1 Handful Rocket
Instructions:
1. Preheat the oven to 180C (350F). Place the cottage cheese, eggs, garlic, herbs, parmesan, and salt and pepper into a food processor and blend until smooth.
2. Line a baking sheet with parchment paper and then pour the smooth cottage cheese mix onto the paper and spread it out with a spatula. Place the tray into the heated oven and bake for 30 - 35 minutes, or until the top has set.
3. While the flatbread bakes fry the bacon in a hot dry pan until it is crispy. Slice the tomato and the avocado too.
4. Remove the flatbread from the oven and then lay it onto a plate and top with your fillings and a pinch of salt and pepper.
5. Carefully roll the flatbread over with the fillings inside and slice in half.
