George, just wanted to say thanks for all you've done over the years, and continue to do for the community. I've been following you for a couple of years now, and look forward to your videos. In regards to recipes I'd say try it, if you don't like it try something else. Experimentation is king (but a little time consuming, but this is my hobby and what I love doing).

Hi, just some remarks. if you store a pH probe, do this in a 3M KCl, solution. Never use RO water or leave it to dry out. If you prepare buffer solution, don't stirr from one to the other, it will affect the pH value of the buffer. the range where you are measuring is around 5 pH, going as low as 3 pH. The best calibration for this range is buffer 7pH and 2pH as you want the probe to be liniair in this range. If you are going to 0.01 pH of accuracy, you need to keep in count the temperature while buffering. this is different for each buffer. for example: buffer 7 will be 7 @25 *C and 7.01 @22*C and 7.02@ 20*C. Acid buffers are more stable than base so buffer 2 will stay 2.00 in a wide temp. range and buffer 10 will vary by 0.01 /*C. Liquid buffer solutions have an open pot life from max 3 Months. When calibrating, give the probe the time to settle, like every detector it will go directly to minimum 90% of the value (if in good shape) and than slowly get those last hunderds of a pH. Last, never wipe the probe, it can or will scrach the glass membrane. pH looks damm easy, but i can assure you that it is not. it's not just dipping a stick in some solution and read. It's a lot more if you want to read a value that you can be shure of that it will be the right one. The pH meter will always give you a value and i can even let it give you the value that you want. So very easy to make mistakes ! One calibration or check in buffer, before use.

I feel the same way about sharing recipes. Even if I have your recipe, my product will be different. I once had a coworker whose wife made an outstanding sweet potato pie, when I asked for the recipe she said it was a secret family recipe from her great-grandmother and wouldn't share it. We were in different circles so we would not have brought the same pie to a potluck. And like fermentable sugar, water and yeast there are only few variations. I think she would have been respecting her great-grandmother by sharing the recipe forward. I would have been honored to reference her with my version. Great video George!

Hello George, you stired calibration powder with same spoon, did it anyway affect calibration process, as your new pH meter scales point two decimal. And what about taste of different recipes, one can put, did it reflects after distillation if yes, than upto what extent. And what if we go for double distillation. Also please elaborate on odour of mash after distillation, for example if we put some spices like cinnamon, or cardamom like. and even in simple wash with these spices. sorry I am new to all these things and learning a lot from your channel. I would also like to thank you for providing such a transparent information. Thank you.🙏

I would offer that anyone using a computer or phone to visit the Barley and Hops Brewing channel should have the ability to find a suitable conversion webpage or an app for their phone. I tried this with Siri and that witch gave me the exact same answer! Thanks to George for putting out good information regardless of the measuring units.

Good job. You have taken the hesitation out of calibration and using a PH meter for those that have never used one or those not calibrating theirs. Just a hint, your buffers might last longer without “growing anything”, if you eliminate the percussive mouth blow to the business end of the monitor before dipping it in the buffers 😃

Really happy with this one. 5-6 gallon mash for a multi grain whiskey/ bourbon. 6 lbs of flaked corn/ maize, 2 1/2 lbs malted barley and 1 1/2 ibs malted rye and 12 - 16 lbs of raw sugar in spring water to make the final mash 5-6 gallons. Of course, heat the corn, add the malted grains at proper temperature and sparge the grain. Add the sugar while the water is still warm and bring down to yeast pitching temp and proper mash volume, get your numbers for specific gravity and then pitch your yeast and ferment. I'm happy to share because it gives great results, whether or not you age it. % for larger batches, 60% corn, 24% malted barley and 16% malted rye. 12-16 lbs of raw sugar per 5-6 gallon mash

Barry Ellis, sparge is just the Distillery/ brewing term for rinsing the left over sugars off of the grain after it's been strained out of the mash. Temperature, which I use a 5 gallon insulated cooler jug for conversion is 160° F. Once you add the malted grain, it will take it down into the 150's° F range, optimum for converting starches to fermentable sugars. I cover the cooler jug for an hour to hour and a half. George's method with the iodine test, to me is foolproof in showing if you have completely converted the starches to fermentable sugars. A couple of drops in a few T of mash liquid and if the black of the iodine dissipates when swirled, conversion is complete. Specific gravity, depends on how much sugars you can draw out of the grain. Each year, area of the country and so many other factors can have differing effects on what the grain has to offer in starches to sugars conversion. As far as possible ABV potential, mine is usually 16-20%. Anything above 12% is pretty good. Sometimes the flavor can be better with a lower % of potential ABV, say 12 - 15%.

Certainly. By the way, you can save part of the grain, 2-3 lbs, recharge it with another 12-16 lbs of sugar and enough water to make a 5-6 gallon mash with the grain you save and allow to sour in a lidded bucket for 3-4 days and have yourself a sour mash to run.

@@chuckdontknowdoya6100 well I am brewing 120 Litres of vodka, I am using turbo yeast for the first time. It's a sugar wash with 3lbs of wheat bran in it for taste. My first big batch of rum was an absolute success. You know I think home distilling makes a better product, I never feel bad after even when it's 57% navy rum.

Degas after fermentation and prior to clearing. Left over C02 will retard your clearing since particles and stuff will tend to cling to the suspended C02. Degassing is the best way to aide in clearing.

i bought the yellow one and did my first wash a few weeks ago, and was unsure how to calibrate it, i figured i'd just need to buy some distilled water, and adjust it until it showed 7. i also had no idea what the little packets were for, and used it to adjust my wash. i'm sure this video will be very helpful for others that just bought one of these PH readers

#Happy Distilling. George, pH of your mash is also important. After you add your grains and get it stirred in, check and adjust pH. Proper pH affects your starch conversion as well as your fermentation.

Probably irrelevamt overall, but does going from one jar to the next with the same stirrer without drying it not change the ph of your test solutions by mixing them? (By how much if it is significant at all would be the question... but I notice you did clean the meter between tests.)

They do work but must be fresh cut them into 6 inch pieces then cut them in half about 2 and a half pounds per gallon of water strip off all the leaves first and give them a good boil to start. Just be warned everyone who tries some will want more.

What does this do to the sugar content and how does it affect the final product? I raise a couple acres of sweet corn and have plenty I COULD use. Any input would be awesome! TIA

George just curious about the one Ph meter you have that you calibrate with the screw in the back. I have the Milwaukee ph600 looks identical to yours, except that to calibrate it they want you to put in a base solution of 7 and use the screw in the back to calibrate to 7, is that the same as yours? Also it say's to keep the probe end, when storing it with water in the cap to keep the probe moistened at all times. Do you do the same thing with yours? Hope you have finished your kitchen reno, don't admire it for too long, we (the community) go through withdraw symptoms when you are not on here!

May i suggest you make up your celebration solution jars. but for testing decant a small amount into a small container and celebrate the meter, then throw away that small amount, don't put the meter into the master jar of celebration solution unless you intend to through it all out after use.

Just to add, when storing a pH probe, don't store it dry. Most come with a sponge in the cap, you need to make sure that sponge stays damp, preferably with storage solution, but a pH 4 or 7 buffer will work. If it stays stored and dries out, it can be "revived" by soaking it in pH storage solution for 1-2h. pH storage solution is just 4M KCl, which would be 298g of KCl in 1L of distilled water, or 74.5g in 250mL. Easier to make it than buy it. A dried out prove can throw off the value, or swing and jump around a lot. That said, don't store it with distilled or deionized water either, which can permanently damage the probe, and it won't give you any value, or the value will be way off. You would need a new prove after this.

certain chemicals have precise constant pH and so these salts are used to make celebration solutions. this is why the celebration packets have strange numbers like pH 9.18. because they are a re known chemical with known repeatable pH

FYI Jack Daniels uses 80% Corn 12% Rye 8% Barley they ferment on the grain to 10-12 % ABV.

There isnt a combination on the planet that hasnt been tried so theres no such thing as a secret recipe to make shine lol and everybody isnt cut out to make moonshine.. they want to take short cuts and get too impatient to ever be a moon shine maker ...they cant follow directions either and thats the main thing... i made it for years before retiring from it at a distillery and we tried thoussnds of combinations to create something a little bit different and sometimes it worked but most times it turned out tasting like a neutral spirit instead of good ole corn liquor or rye whiskey ..

uuummmm.. when you started using your PH meter i suggested that you use PH buffer {up/down} to calibrate it cause the meter you were using is crap. i'd use drops before using that meter. PH is VERY impotent when growing marijuana. different strains at different PH in water systems. i know this cause i did a legal medical grow for 6 yrs. before getting into distilling. btw...5.2 is standard.
