What a fun thing to do! When I was a kid, my grandmother would get some of these and we would share them. Now that I have grandchildren of my own, I would never buy the actual product because of all the toxic ingredients. It just did not occur to me to make them myself. Now if we get the chance, we can have a fun day of baking with wholesome ingredients and have the yum as well. Thanks!

😂 my dad was the icing man at Hostess Cake in San Francisco from the early 1930's to early Sixties. He always told the tour groups that the Curly Q on top was made by the mixer winding up the icing 😂😂😂 His boss was never happy about that. He brought home seconds for us everyday. Cupcakes, snowballs, twinkies and fruit pies.

My step-father was a janitor there 70's-retired early 90's and was part of that major Alioto lawsuit. Any who, we always had a box or two in the fridge of donuts, Snowballs, Suzy-Qs.... BTW: Mom worked seasonly at Sees😊

My mom put me on a diet for my entire childhood, starting at age 5. I NEVER got sweets in my lunch. But blessed be the birthday kids back in the day who brought these instead of the homemade cupcakes. It felt like I was committing a felony, but tasted like heaven to me. ,😂

Hey Becky, here’s a handy little tip - when you want to have a filling in a cupcake wait for them to cool and then use an apple corer to take out the centre of the cupcake (don’t push the corer to the bottom of the cupcake or the filling will spill out). You’re then left with the perfect size hole for the filling. If you want a neat finish on the top keep the hole you cut out and cut a little off the length then pop the hole back on top of the cupcake - ta da surprise filling and a neat cupcake top to frost on to. Also if you want a specific nozzle with which to fill a homemade Twinkie buy a donut nozzle which has a longer spout that you can pipe from each end of the Twinkie.

I bought the cupcakes for my granddaughters who are 8, 10, and 12 years old. They wouldn't eat them, so I gave them to my neighbors kids. They're definitely not the same as they were when I was a kid. I'm 62 years old, so I'm happy to see you making a homemade version. Thank you!

Please do Ding Dongs! Helpful hint for pastry tips: The white part goes inside the bag, then the tip on the outside, then you screw on the ring. That way, you can swap out the tips without getting them from inside the bag.

Piping tip: don't push all the icing (or whatever you're piping) to the tip, smoosh about a 1/3 of it to the tip; leave the rest on top, so you'll have a small ball in your hand & a big one on top of your hand, this will also help keep the bag from breaking at the seams. Also the big white plastic part goes in the bag, the metal tip and ring on the outside so you can change out the tips if, needed. It was great seeing you have so much fun!

I definitely examine everything that I get. I soaked my meat in lemon juice because of All the chemicals they shoot in them. Also put your flour and corn meal in the freezer. The people that work for the companies don't have the work ethics our generation did.

Becky, if you're filling or decorating with a baggie and you have a break thru and need another bag just put the broken bag into the new bag. It works even with 2 bags together! Clean up is easier.

Hi, when baking with chocolate it's best to use the old method of buttering your pan and then flouring the pan if you don't have liners or you are baking a cake.😊

I was thinking the same and instead of greasing and flouring the pans grease and dust with cocoa powder. Also, the tops of the cupcakes stuck perhaps because Becky wiped away the non stick spray from the tops of the pan when cleaning them before baking.

When you do the decoration on top, allow the cream to fall out of the tip with just a slight amount of pressure from your hand. When you press too hard with your hand, the icing comes out and wrinkles. So make sure your icing will flow enough that you can follow the pattern around cleanly and smoothly. Practicing on the parchment paper would also help. They look delicious.

Hi, Becky! While the cakes are warm, take a skewer and poke it in the cakes where the filling will go. Gently twirl the skewer to make room(a cavity) in the cake for the filling. This will reduce the need for you to squeeze the bags so hard.😊

Becky it’s always good to add a little bit at a time of your flour mixture. You could lose some of your leveling agents when you add all at once & it poofs out of your mixer. Which could result in a faulty baked item. 😊

You can make a pastry bag from parchment paper. Use a rectangle and roll it into a cone. The fold in the points at the top.

I enjoyed your video. The top of your cupcake tin needed to be greased because the cake overflowed on it as it baked. Dusting pan with cocoa powder would be added insurance. I’m inspired to make filled cupcakes!

You can buy a sleeve for on top of the Mixing bowl with your Kitchenaid Machine. This way the Flour will not jump out.

Hostess/little Debbie used to make Twinkie shapes and cream filling with marshmallow covering the entire outside and strawberry jam covering that all over the marshmallow and then dipped into coconut. Delicious!🎉

I spray all of my tins with either coconut oil or flour/oil spray. They pop out of the tins perfectly. Also, if you over fill the cup, they will rise up and over the sides and stick, unless you spray the top of the tin as well.

You should use Baker's Joy or the equivalent when doing cakes and cupcakes, and use it liberally. Then you won't have the problem with sticking.

Homemade baking goop = equal parts of flour, oil & shortening. Mix well and paint tins with pastry brush. Last approximate 9 months in refrigerator. If using for chocolate cake generously paint tins as chocolate cakes notoriously stick more than other cakes. Or use chocolate goop for chocolate cake = 1 Tbsp cocoa, 2 Tbsp oil & 2 Tbsp shortening and mix well. Paint tins with pastry brush.

4:37 For anyone thinking about getting a Bosch mixer, we got one a few months ago and its great! Having the mixing arm low and in the center makes it super stable for kneading. I highly recommend upgrading to the stainless bowl, mine stays on the countertop and I personally think it looks better and more subtle than the white plastic. It also holds warmth well for rising dough and I feel much better having my foods mixed in a metal bowl (the center mixer and some of the attachments are plastic but that wasnt a deal breaker for me) We eat a lot more pizza, tortillas and sandwich bread now that I make them regularly 🤩

Becky, if you put the coupler piece into the bag and then put the tip and ring on the outside of the plastic, you can change tips at any time. I know for this project you didn't need to, but that's the purpose of using the coupler is to be able to change your sizes and shapes while decorating. Was fun watching you put these goodies together though :)

I use to love hostess cupcakes and twinkies. I have gotten the off brand from aldi but don't get often. Your homemade cupcakes and twinkies look yummy. My youngest niece and I did a baking day when she was 13 or 14 and had a ton of fun. We did several goodies. We had enough for her to take home, some for my mom and some for her and for her family. Everyone was happy

Just an FYI, the plastic coupler goes in the pipping bag and the tip goes on top of the bag and coupler so that you can switch out pipping tips if you need to.

Those look so delicious. The nice thing about the Bosch mixer that I like is you don’t have to scrape down the sides.

They make a long pointed tip to put filling in cupcakes and pastries. Wilton has one I know.

Hey Becky. Love your channel.. I have made a twinkie cake for years, but the filing in a twinkie isn't frosting, it's more of a cream filing..the cupcakes look awesome!

Twinkies contain citric acid, which adds its signature tartness and brightness. I think the orange zest in the recipe is meant to depart that tart flavor.
