It’s #TastyTuesday with a tasty Indian dish with red lentils. It’s packed with flavor and it’s super hearty!
Ingredients:
* 1 ½ cups red lentils
* One 14.5-ounce can diced tomatoes or 1 1/2 cups fresh diced tomatoes
* 1 tablespoon olive oil
* 1/2 onion, diced
* 4-5 cloves garlic, minced
* 2 tablespoons mild curry powder
* 1 tablespoon yellow curry paste
* 1 tablespoon garam masala
* 2 teaspoons garlic powder
* 2 teaspoons onion powder
* 1 teaspoon chili powder
* ½ teaspoon ground turmeric
* 1/4 teaspoon Salt
* 1/4 teaspoon black pepper
* ½ cup unsweetened coconut milk
* 3 1/2 cups water
* Cooked basmati rice (or rice of your choice) to serve with it
Optional: Lime wedges and cilantro leaves, for serving
Directions:
1. Heat the olive oil in a medium pan over medium heat. Add the onions and garlic and cook, stirring occasionally, until the onions are translucent and softened, about 3-5 minutes.
2. Stir in the lentils, tomatoes, 3 1/2 cups water, coconut milk and bring to a boil over high heat.
3. Mix in all seasonings: curry powder, curry paste, garam masala, garlic powder, onion powder, chili powder, turmeric and salt and pepper.
4. Reduce the heat to low, cover and cook for 10-15 minutes until lentils are tender.
5. Serve with rice and optional lime wedges and cilantro. Enjoy!
