Mini Lemon Cheesecake with lemon jelly and almond biscuit base / No Baking / Easy Recipe / ASMR cooking
For 2 mini cheesecakes (7 x 5 cm):
The cookie base:
50g cookies (I used wholewheat digestives)
30g almonds
15g melted butter
1 tbsp (15ml) milk
The Cheesecake filling:
100g mascarpone
120ml unsweetened whipping cream
30ml lemon juice
30g granulated sugar
The lemon jelly:
80ml water
20ml lemon juice
20g granulated sugar
a pinch of turmeric to add lemon colour (optional)
1 level teaspoon of vege gel (instead of gelatin)
Extra raspberries to garnish
