the baby in my belly can't wait to eat these. HAHAHA I have seen this done with pre-made mix, but never from scratch so THANK YOU! I made the Mrs. Wages pickles and canned them, but the brine was not that great. VERY Salty! And, once you can them, they turn limp. I am really looking forward to making these! :D

You will enjoy this a lot and so will your nugget! I don't like those premade mixes and I much prefer a crisp pickle to a softer one, except for my bread and butter pickles which are supposed to be on the softer side. These taste great even after only one day! I did let them cool off on the counter before sticking them in the fridge and they were great! the next day. Yesterday even better and today amazing!

i have been buying pickles and slicing them into hamburger slices..... and i agree, i like that CRUNCH that you lose once you process them. :( the processed ones are good to have on hand, maybe for hamburgers, but i am with you. and i am NOT impressed with the premade mixes! oh man, i am drooling. i cant stop eating garlic dills. i am on my 3rd jar. in a week! HAHAHAHAHA

John Smith You don't. This is not a recipe for bread and butter pickles, which are not conducive to the refrigerator method of pickling.

Omigosh NOW WE'RE TALKIN!!! I've spent hours trying to find a good recipe for these refrigerator pickles and I FINALLY found yours. But darnit, it was AFTER I already just took parts from a bunch of vids and made 4 jars. I wanted MORE ZING and I found ZERO pickle making vids that added any pickeling spices. 😣 So I will have to make some more soon using your recipe with all the goodies you put inside. I WAS surprised, tho, to see that you didn't use any dill weed?? I LOVE my pickles dilly dilly, garlicky and zingy!! So I saved your vid to follow with your ingredients the next time I get some cucs. Is it ok to use the regular metal lids? Also, I was told that putting grape leaves at the bottom of the jar will make a crispier pickle. What say you?

Drames Thonovan Yes, you can use the metal lids. I don't know anything about using grape leaves. I suggest you actually deeply research that fact before you do it because it could mess up your end result.

I've always used cold brine because I didn't want them soggy. But, you say they stay crispy using the hot brine. I guess I'm just making sure I understood you correctly. And, btw, have you done jalapenos? I do them the same way (cut into rings). Yum

Hi Noreen! Love your videos. Your pineapple upside down cake is now in my family's regular rotation! Just one question: Is microwaving your jars an acceptable form of sterilization? What about in the dishwaher with the hot dry option after the wash? Any info is greatly appreciated! Thanks.

Refrigerator pickles do not require the jars to be sterilized because you are not actually processing them to be shelf stable. I sterilized these jars in the microwave to dry them and heat them just a bit. Not for bacteria killing reasons. Additionally, there is enough vinegar in this recipe that there is not going to be an issue with bad bacteria because these are fermented in the fridge. Yes, this is acceptable in this situation. I also do this when I make homemade yogurt.

Mmm. Homemade pickles that don't take forever, awesome. Do these taste like japanese lactofermented pickles? I bet cauliflower would just sing done this way. Good thing I've got plenty of canning jars. More like this please, ever make your own kinchi or sauerkraut?

Missus Hail To The Chef Most definitely you can use fresh dill. Just shove it in the jar before you put the cucumbers in and add some to the top if you want. Make them as dilly as you like.

LOL! Thanks for the kind words. It took me a long time to learn to let that stuff roll off. Sometimes it still bothers me, however when I have a "forbidden" words option most of their nasty comments don't even make it to this section before anyone sees them. As for the thumbs down, I have it on good authority that there is actually a "we hate Noreen" club of sorts. They are subbed, they come to every video I post just to hit the "thumbs down" button. I wish I had that kind of time in my life to do such senseless tasks.

Ground mustard is really not appropriate here because it will make the brine murky and thick as well as making the pickles super hot and spicy. If you don't have mustard seeds, then just leave them out.

The intro and outro music are only at the beginning and end of the video. You can always use the fast forward option if you do not enjoy the less than 30 seconds of music that you hear at the beginning. Otherwise, I will not turn anything off.

Sweet pickles are totally different recipe. You’re going to need to look that up. You cannot change a deal pickle recipe into e-suite pickle recipe. You need to look up a safety tested canning recipe for bread and butter pickles or sweet pickles in order to achieve that goal. Hope that helps!

Sweet pickles are not something that are conducive to the refrigerator pickling process. They really need to be cooked and canned and they need to cure for a very long time in order to absorb the brine and sugar.

The enzymes in the bay leaf will keep them crisp. No need for the addition of Alum.

That is not accurate info. If it were the pickles I make without alum but with bayleaf would be crisp and they are not
