Biggest difference between 2010 and 2018 wasn't mentioned in the tasting: the "normal" boys made it all by themselves (at least on camera), instead of just chopping the odd vegetable Ben hands them and making a huge mess. That is impressive! I like the remakes! Keep them coming!

That's nearly it ! Belgian way of doing chips : Wash, peel, cut the potatoes in 1cm sticks and do not wash them after, dry them with a towel. In Beef tallow 160°C during 8 min. Let it completely cool down on a paper towel or a drip pan. Then bring the beef tallow to 180°C and fry them until you ear them sing (1 to 3 min). The same high-pitched sound you ear from a chicken when it comes out of the oven. Shake it in a big bowl to let the fat drip out, salt it and serve it in another plate. Here you go Belgian style ! Watch out : beef tallow can only be warmed up 10 to 15 times max. Hope you see this comment guys. Belgian food is rich and amazing.

Aww yeah, Ben knows how to correctly fry fries! Although I would go for 160°C for the first fry, let them cool and drip out, then full force 190°C for the second fry. And yes using oil is healthier, but to get the very best fries you'll ever eat you need to fry them in filtered beeffat. (in Belgium it's called "Ossewit" or "Blanc de Bœuf") Honestly if you've tried it once you'll never want to use oil again!
