I use a penny and a screwdriver to remove the firing pin and bolt shroud. Also made my own tool for the ejector pin and sprin.

I have a 2013 build 700 SPS tactical in 223. I have an issue where the shell casing gets kicked off the bolt before ejection and it lays on top of the next live round waiting to go in. I heard this was an issue with the ejector spring being too strong kicking the round off premature. Any info you have or how to fix this issue would be grateful!

I've never come across this issue. The ejector spring may be to strong, or there may be an issue with the extractor if it's letting the case go early

Do I have to remove the firing pin to remove the ejector or can I only remove the ejector?

The ejector can be removed without removing the firing pin. However, removing the firing pin ensures there's no tension on the bolt handle when opening and closing
