I think these have just Hall effect sensors, not encoders.

how would one control the motors, or engineer something to control them with? im hoping to basically make a go kart, but much smaller, and the same size as the hoverkart seat attachments, but i only need a way to control the torque so i can use a "pedal" to modulate power. Any info on how these components are controlled?

You should reprogram the control boards as they are great little cheap esc’s (Edit I should note I successfully made a go kart like this, and I’m 12 so i think it should be pretty easy)

Sure that White wire is temperature? A BLDC hub motor for an ebike has White as a speed sensor (1 pole per revolution)

3 wires are phaze wires. Hook them up any way you want. The others are sensor wires.
