Resep Bakso Goreng (12 pcs)
Bahan minyak ayam bawang (bisa diganti minyak polos + bawang merah goreng siap pakai):
70 gr kulit ayam
3 sdm air
3 sdm Minyak Goreng Fortune
6-7 siung bawang merah ukuran besar, iris
1 sdm ebi, rendam air hangat
Bahan adonan:
250 gr paha ayam fillet
150 gr udang cincang
4 siung bawang putih halus
½ sdt merica
1 sdt garam
2 sdt kaldu jamur
½ sdm gula
2 ½ sdt baking powder
1 sdm kecap ikan
1-2 sdm minyak
1 butir telur
70 gr air es / es serut
110 gr tepung tapioka
25 gr tepung terigu protein sedang
25 gr tepung beras
Lainnya:
Minyak Goreng Fortune untuk menggoreng
Langkah:
1. Panaskan wajan, masukkan air dan kulit ayam, rebus hingga air menyusut kemudian gunting-gunting kulit ayam
2. Masukkan bawang merah, ebi, dan minyak goreng Fortune, masak hingga kering kemudian pisahkan minyak dengan campuran kulit ayam
3. Untuk adonan blender ayam, campuran kulit ayam, garam, gula, kaldu jamur, merica, baking powder, dan bawang putih hingga halus
4. Masukkan telur, haluskan kembali kemudian pindahkan ke dalam mangkuk
5. Masukkan udang, aduk rata lalu tambahkan kecap ikan, air es sedikit demi sedikit, dan minyak ayam bawang, aduk rata
6. Masukkan tepung tapioka, tepung beras, dan tepung terigu, aduk rata
7. Panaskan minyak goreng Fortune, bentuk bulat bakso dengan scoop ice cream, lalu goreng di api kecil selama 15-20 menit hingga kuning kecokelatan, lalu besarkan kompor di api sedang goreng kembali 20-30 menit, tiriskan
8. Bakso goreng siap disajikan

Bakso Goreng Recipe (yield 12 pcs)
Fragrant Chicken Oil ingredients (or use oil + ready-made fried shallots):
70 g chicken skin
3 tbsp water
3 tbsp Fortune Oil
6-7 pc shallot, large, sliced
1 tbsp dried shrimp, soaked in warm water
Dough ingredients:
250 g chicken thigh fillet
150 g shrimp, chopped
4 clove garlic, minced
½ tsp pepper
1 tsp salt
2 tsp mushroom stock powder
½ tbsp sugar
2.5 tsp baking powder
1 tbsp fish sauce
1-2 tbsp oil
1 pc egg
70 g cold water / shaved ice
100 g tapioca flour
25 g all-purpose flour
25 g rice flour
Others:
Fortune Oil for frying
Steps:
1. Heat the pan. Add water and chicken skin. Boil until the water is reduced, then cut the chicken skin.
2. Add the shallots, dried shrimp, and Fortune oil. Cook until they’re crisp, then separate the oil with the chicken skin mix.
3. To make the dough, blend the chicken fillet, chicken skin mix, salt, sugar, mushroom stock powder, pepper, baking powder, and garlic until smooth.
4. Add the egg in and blend again, then transfer to a bowl.
5. Add the shrimp in. Mix well, then add fish sauce, cold water bit by bit, and fragrant chicken oil. Mix well.
6. Add the tapioca flour, rice flour, and all-purpose flour. Mix well.
7. Heat the Fortune Oil. Shape the dough into balls with an ice cream scoop, then fry on low heat for 15-20 minutes until yellowish brown. Then, turn the heat up to medium heat and continue frying for 20-30 minutes. Set aside.
8. Bakso Goreng is ready to serve.
