Restaurant-Style Eggplant Kebab Recipe
Ingredients:
350g diced beef
1.5 cups hot water
4 eggplants (approximately 750g)
2 red bell peppers
3-4 green peppers
1.5 - 2 cups vegetable oil
1 onion, finely chopped
1 teaspoon pepper paste
2-3 cloves of garlic, finely chopped
4 medium-sized tomatoes
1 teaspoon salt
1 teaspoon black pepper
Instructions:
Add the oil to a pot and heat it. Add the diced beef and sauté until it changes color.
Add the water, remove the foam, and cook the meat until it absorbs the water and becomes tender.
Peel the eggplants with stripes, chop them, and soak them in salty water for 15 minutes.
Slice the peppers.
Fry the eggplants and peppers.
Sauté the onion, add the pepper paste and garlic.
Add the tomatoes and cook until the water is absorbed.
Add the fried eggplant, peppers, and meat without stirring, and cook until the tomatoes release their juice.
Add salt and black pepper, stir gently, and cook for 15-20 minutes.
Let the dish rest for 30 minutes before serving.
Tips:
You can also bake the eggplants instead of frying them.
Stir the dish only once during the cooking time.
Pre-boiling the meat will help it cook faster.
You can serve it with rice if you like.
