There is a srub here in the Western US called the Choke Cherry. Not very many people know about it. The taste is strong and it cannot be eaten. But when you extract the juice and sweeten it, then add pectin, it becomes this delicious syrup. Not very many people know this, and only a few keep this recipe alive.
