Ingredients (1 to 2 servings)
300g chicken thighs
2 tablespoons salted malt
2-3 pinches of salt
2 cloves of garlic (small)
1 slice of lemon
A dash of flour
A dash of katakuriko (potato starch)
Shio koji dressing
1 tablespoon Shio Koji
1 tablespoon of vinegar
1/2 tbsp olive oil or sesame oil

RECIPE
1) Cut chicken thighs into large pieces, mix with shio koji, salt and garlic and leave to marinate for 20-30 minutes.
2) Coat the chicken with a mixture of half flour and half potato starch.
Fry at 170~180° for 4~5 minutes. When golden brown, remove from the pan.
