Just started my first cook on my new Joe jr. rack of baby backs cooked this same method. Holding 225 so far very nicely. Thanks for your videos they really helped with a starting point for me. I have many years experience cooking on my gas smoker but the kamado is a new way of cooking for me. Thanks for the videos and tips!

I’m so pleased with my Jr. 6hrs at 225. Put the ribs on and didn’t open it for 5 hrs. Jr held temp perfectly. After 6 hrs brushed on some sauce and under the broiler for just a second to make the sauce bubble. Undoubtedly the best rack of ribs I have made! Perfect bite and pull. I’m amazed how juicy they are! Wish I could post a pic.

Have a Big Joe 3 and couple weeks ago got my Joe Jr. Most of my cooks are small roast, steaks, etc., just for the Mrs. and me. I'm loving my Joe Jr. Easy to control, heat up, uses very little charcoal, easy to clean, just loving it. When it comes to ribs, I'll be using the Big Joe.

we are a family of four and I already own the big jow III but was looking for a smaller one and was undecided between a classic or a jr. After I asked James he recommended Joe Jr and since then I haven't look back, I'm having a lot of fun with it. Some great cooks come from it. Now I only use big joe when doing ribs or the family is over. Just wish there were more accessories for the joe jr.... PS my daughter thinks the Jr. looks so cute compared to the big joe. Thanks James

Thank you for all of your excellent videos! I am a newb for sure. I bought a classic 2 at Costco and have had 2 cooks so far. The first was an overcook. The second was a success with chicken thighs. Unfortunately, I do not own the slo roller or any other surfaces other than the ones that came with the Kamado Joe. Wondering which level to use the deflectors to cook a single rack of baby back ribs? I have watched many videos of your work and they include the equipment I don’t own yet. Thanks for your help!

How do you know when these are done? Looking for a certain temp? Is your sauce equal parts BBQ sauce and ACV?

if you were probing you would see around 200f. otherwise i generally land in the right spot with time and temp. i would say 70/30 sauce to ACV... maybe 80/20 even. just thinning it out a little, don't want water consistency

Those look excellent. What’s your thoughts on cooking by grate temp vs dome temp? Particularly in the classic or big joe the difference can be like 50 degrees between the dome thermostat and my probe at the grate. Which do you typically go by?

I would first check my dome in boiling water to confirm it’s accurately reading 100c as they tend to work their way out over time. I find my probes on the grill and the dome end up pretty close after this

i think its possible... the grill has space but the temp gauge is getting close to poking the ribs, if you moved it out some you could absolutely fit 3

I just got my Joe Jr. about a month ago and a rack of baby backs was the first thing I tried on it. As a noob the only mistake I made was putting too much hickory chunks into the mix. Otherwise they came out perfect even if they were a bit too smokey. Thanks for the tips in this and other videos to help make me a better Joe Jr. cook.

I’ve thought about rib racks and cooking them on edges. This proves I can do 4 or 5 at oce in a classic Joe and get good results. Especially since im in love with the Kamado. I get great smoke rings with oak blend lumps. I don’t believe the wood chunks are necessary. My poor pellet grill is left out of the fun. My brother that sold me on the pellet grill is in disbelief at the quality of bbq that can be achieved on charcoal Joes.

Some people use a snake method for their charcoal. Smoking dad just did a sleeping snake method for the ribs. Apply this to the classic Joe or the big Joe, and I wonder how many racks of ribs could be cooked!

Great video for me as a new Jr owner! Looks like you reverted back to the stock daisy wheel after using the SM cap. I remember you said it wasn’t sealing right, so were you not able to get an acceptable seal? Thanks!

turns out you can't install the gasket over felt and i ended up melting it getting distracted when the grill went to 800f so fast with the improved airflow. Thats all fixed and ready to go, just working on the video to officially introduce it now that I have had a chance to play with it and notice the upgrade benefits

thanks, just made a simple box that has no back side so i can slide the joe into it for storage ... but i never use that feature lol and its a touch too high when making it tall enough to clear the joe so in hindsight i would make it again without the inside storage option and a few inches lower height

I've also done a 6-7lb brisket flat on my Joe Jr and it turned out great. Just need to make sure that the flat is not too long and can fit on the Jr.

Your starting to convince me on the JR Great content! Ive been considering buying a JR or a classic 1. any thoughts? Ive been cooking on a really old 22" weber .

I would let the size of the meats you want to cook and location decide... the jr I have done beef ribs, a boston butt, pizza, beer can chicken and now ribs. Its pretty versatile, brisket and doing multi zone etc. would be the classic
