■Materials (for one 15cm round type)
・Eggs: 2 ・Cane sugar: 60g
・Salt: A pinch ・Rice oil: 60g
・Carrot: 100g
・a. Rice flour: 100g
・a. Almond Poodle: 20g
・a. Baking powder: 1 teaspoon ・a. Cinnamon powder: 1/2 teaspoon ・a. Nutmeg: a little ・Roasted walnuts: 40g
・Raisins: 40g
Cheese frosting cream cheese: 100g
・Powdered sugar: 20g
・Lemon juice: 1 teaspoon
■Preparation ・Spread paper on the mold.
・Preheat the oven to 180℃.
・Coarsely chop walnuts.
・Peel and grate carrots.
・Bring the cream cheese to room temperature.
■ How to make
1. Crack the eggs into a bowl, loosen them with a whisk, add cane sugar and salt and mix.
2. Add rice oil and grated carrot and mix further.
3. Combine the powders in (a), sift them in, and mix gently with a rubber spatula.
4. Add walnuts and raisins, mix quickly with a rubber spatula, and pour into the mold.
5. Bake in the oven at 180°C for about 40 minutes. If you stick a bamboo skewer in it and it doesn't stick to the sticky dough, it's done. Place on a cake cooler to cool.
6. Make cheese frosting. Put the cream cheese in a bowl and knead it softly with a rubber spatula.
7. Add powdered sugar and lemon juice and mix.
8. When the cake in step 5 has cooled, spread the cheese frosting over it.
■Tricks/Points/For those who don't like spices, it's delicious even without cinnamon or nutmeg.
