Ingredients:
1/2 cup basmati rice
4 cups whole milk
1/2 cup sugar (adjust according to taste)
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
2 tablespoons chopped nuts (almonds, cashews, pistachios), plus extra for garnishing
1 tablespoon raisins (optional)
Instructions:
Rinse the basmati rice under running water until the water runs clear. Then soak the rice in water for about 30 minutes. Drain the water and set the rice aside.
In a heavy-bottomed pan or a pot, bring the milk to a boil over medium heat, stirring occasionally to prevent it from sticking to the bottom of the pan.
Once the milk comes to a boil, add the soaked rice to the pan. Lower the heat to medium-low and let the rice simmer in the milk, stirring frequently to prevent the rice from sticking to the bottom of the pan.
Cook the rice in milk until it becomes soft and the milk starts to thicken, which will take about 30-40 minutes. Keep stirring intermittently to ensure even cooking.
Once the rice is cooked and the kheer has thickened to your desired consistency, add sugar and stir until it dissolves completely.
Add cardamom powder, saffron strands (if using), chopped nuts, and raisins to the kheer. Stir well to combine.
Let the kheer simmer for another 5-10 minutes, allowing the flavors to meld together. If the kheer becomes too thick, you can adjust the consistency by adding a little more milk.
Once the kheer reaches the desired consistency, remove it from the heat and let it cool slightly.
Serve the rice kheer warm or chilled, garnished with additional chopped nuts. Enjoy!
Feel free to adjust the sweetness and consistency of the kheer according to your preference. You can also experiment with adding other flavors like rose water or cardamom for variation.
