CHEUNG FUN (hack) 😋 Cheung fun in China or Bánh cuốn in Vietnam are ultra thin sheets of rice noodles that can be filled with various fillings and topped with different sauces… perfect for summer!🫶 RECIPE (6 rolls, 25min prep time): -250g of your favorite mushrooms Fry until all the moisture is gone. -1/2 Tsp each ginger and garlic powder -3 Tsp teriyaki sauce -a handful fresh cilantro Mix it. -6 sheets of rice paper Briefly dip in cold water and place in an oiled plate. Add some filling, roll like a burrito and brush with a little oil. Steam for 5-6min or microwave for 1-2mins. Add a long cut, medium thick cucumber slice before the loose ingredients. When you roll, it acts like a spine and makes flipping them in the pan flawless. Also gives amazing crunch. I season mine before I add them to the roll. Soooo good. 👌🏼❤.

Having followed your shorts for long, I would advise you to try out Mung bean (steamed & mashed) mixed with corn starch & oats for the filling. FYI, mushroom & Beans (probably in form of tofu) are key to create textures & tastes for many vegan recipes served to Buddhist monks in Northern Vietnam. 😊

If you ever wanted to try an authentic one, definitely find your nearest Vietnamese restaurant. Banh cuon is one of my favorite Vietnamese dishes! It’s not usually vegetarian but can always ask away!~ Vietnamese crepes is another good one!!

I prefer them fried in a small amount of oil. I ate them whilst in China, Malaysia and Thailand. They're a good way to use up leftovers. Roll chopped veggies in seaweed sheets FIRST, then wrap with rice wraps. I also make banana) chocolate) peanut butter ones, crispy and delicious.

You could use marinated grated hard tofu instead. Smoked would be good here. You can buy it pre-seasoned or let it soak a marinade you made instead, up to you.

Bánh cuốn in Vietnam is a bit different. Its have white color not clear like this. But this is a good recipe since i find it too boring to eat rice paper in normal way! Ill try this 👍

I imagine zucchini or eggplant could do just as well with a similar texture, but you could do a leafy green with roasted carrots and corn for a slightly different flavor, or someone suggested cucumber above. I have eaten something like this (we were experimenting with cheap babimbap) with finely chopped broccoli, julienned green onions, carrots and chopped up frozen sweet potatoes and it was surprisingly good so it can really be up to you.😅
