This Christmas fruit cake is a simple version of the traditional fruit cake which has soaked dry fruits. You will only need one day to make this cake as we cook the dry fruit for rehydration instead of soaking it. No hand mixer is needed for this cake.
This fruit cake recipe, uses raisins, candied oranges, cranberries, prunes, and other dried fruits which give a sweet, tangy, and citrus flavor to the cake but you can use any dry fruits that you like instead of this mix.

Ingredients for the Cake:
Golden Raisins 60 gms
Black Raisins 75 gms
Dried Figs 35 gms
Candied Orange 25 gms
Dried Cranberries 40 gms
Baby Oranges 30 gms
Baby Lemons 20 gms
Prunes 50 gms
Water ½ cup or 110 gms
Hazelnuts 25 gms
Few Almonds for garnish
Flaked Almonds 50 gms
Ground Almonds 50 gms
2 Large Eggs
Salted butter (Amul) 125 gms or Unsalted butter + 1 tsp salt
Brown sugar 100 gms
All-purpose flour (Maida) 88 gms
Vanilla essence ½ tsp
Lemon Juice 1 tsp
Baking powder ¼ tsp
Baking soda ¼ tsp
Cinnamon powder ¾ tsp
Clove powder ¼ tsp
Nutmeg ¼ (optional)
Ingredients for the Soaking syrup:
Mixed black and golden raisins 50 gms
Water 240 gms or 1 cup
This mix is enough for one feeding. Multiply the quantity depending on the number of times you would want to feed the cake.
Note:
Bake for 1hour 30 mins at 150 degrees C or till a toothpick comes out clean. Use an oven thermometer for best results.
Store cake in an airtight container
All ingredients must be at room temperature while working with them unless mentioned.
Any dry fruit or tutti-fruity mix can be used instead of the suggested mix just keep the proportion of fruit to cake ratio the same.
Apple juice / Orange juice / Alcohol can be used instead of the soaking syrup.
You can feed the cake every 5 days, till the last week before consumption.
The cake can be frozen for up to 6 months easily.
