Well, let's make Tonkotsu Rāmen !
To create a pot of Tonkotsu broth have gone through long simmering of meat bones.
This time introduce a very simple & yet tasty as is very close to the authentic taste ~ !
Let's have a bowl of HOT Rāmen ~ (๑˃̵ᴗ˂̵)و

[ Ingredients ]
Spring onion - 1~2 stalks
Chashu ( Pork belly ) - 5~6 slices

Molten egg ( Nitamago ) - 1 piece

Ramen - 1 serving
Kimchi - some
Edible seaweed - 1 slice
[ Pork Broth Base ]
White sesame - 2 tablespoons
Bonito flakes ( Katsuo bushi ) - 2gm
Garlic - 2 cloves
Ginger - 5gm
Miso - 1 teaspoon
Sugar - 1 teaspoon
Soy sauce - 1/2 tablespoon
White pepper - some
Salt - some
Sesame oil - 1 teaspoon
Chicken broth - 300cc
Milk - 30gm
Butter - 5~8gm
* * This is an easy way to cook at home. Family & Simple Edition.
So I used chicken broth.
The authentic way is to use the pork & chicken bone & a lot of vegetables !
[ Method ]
1. Put all the ingredients for the『Pork Broth Base』into blender ( except butter ).
2. Pour into sauce pan heat over medium-low heat, add in butter.
* if worry about the garlic taste, can boil even longer !
* it's OK without butter, butter is create another Umami flavor.
3. Spring onion, cut into shred.
4. Chashu, cut into slice.

5. Molten egg, cut into half.

6. Rāmen, cook until taste of liking & transfer to a bowl.
7. Pour hot broth into the bowl, place the topping of your choice over Rāmen.
* can choose blanched seafood, ham, fish cake, sweet corn & etc for topping.
