Rihaakuru is a thick sauce made from fish, usually consumed with rice in the Maldives. Making Rihaakuru is a time-consuming process that starts with cooking fish in water and salt. The fish is removed once cooked and the remaining water is boiled for hours until it turns sticky. Then it’s stirred until it cools down making a thick paste.
