Riz bi Haleeb ( ruz bil haleeb) is a delicious, creamy arabic rice pudding gently flavored with blossom water.
Very popular during month of Ramadan.

Ingredients
4 cups of Fresh milk
2 cups of water
½ cup short grain white rice
½ teaspoon vanilla
1/3 teaspoon mastic (crushed)
½ cup granulated sugar
2 ½ Tbsps cornstarch
2 tsp orange blossom water or rose water
¼ cup pistachios, finely chopped
1. In a saucepan add water and rice, bring it to a boil and cook the rice half way though, around 15-20 mins.
2. Meanwhile combine together milk, sugar, vanilla, mastic and corn starch, mix well (make sure there are no lumps).
3. Add cooked rice to a milk mixture, on a low heat bring it to gentle simmering, stir frequently so that the rice does not stick to the bottom of the pan.
4. Simmer and stir until the consistency is thick enough for your taste.
5. Remove from heat and add rose water ( blossom water)
6. Cool on the counter to room temperature before placing in the refrigerator. Serve in individual cups and garnish with pistachios, raisins, cherries ect.
