2 cups of GOYA MOJO Marinade
2 tablespoon salt or more
2 tablespoon of crush garlic
2 tablespoon granulated garlic
1-2 tablespoon oregano
1 tablespoon black pepper
1 table spoon of cumin
4-6 limes or lemon or cooking oranges
1-2 tablespoon chili-lime blend seasoning (optional)
OPTIONAL add 2 cups of White cooking wine to your marinade i did not use it on this video because i did not haveit at the moment but also is a nice addition to it
Rinse your Pork Shoulder and make long deep cuts with a knife the more the better so it can be marinated and can be done the night before by storing in the fridge marinated for better taste.
Preheat oven at 350 takes about 21/2 to 3 hours in convection oven and longer in a regular oven
Convection oven place skin top and cover with aluminum foil for the first 2 hours ( you will not have to worry about turning the pork shoulder)if convection , later uncover and continue cooking for additional hour and check with clean knife if it need to cook longer leave it for another 1/2 hour always checking
Skin can be browned at your choice (if the skin is getting burn and pork is not ready place aluminum foil right over it. you can see mine burned a little but we normally do not eat the skin but the final result was amazing and so it will be yours
NOTE : when i take out the finish pork shoulder i always like to sliced it and add lime or lemon and place it back in the oven for extra 10 min (OPTIONAL) and that will finish cooking any pink areas.
Regular oven Can easily take 3 1/2 hours (small pork shoulder) could also set oven at 325 degree for 3 to 4 hours since ovens vary and the darkness preference of the pernil (pork Roast)
Preheat at 325 to 350 depending oven at the second lowest rack or middle rack
Place skin down, cover with aluminum foil and cook for the 1 hour then remove from oven carefully and turn it over skin top cover with foil and cook for additional 2 hours after that uncover and let the skin toast for additional 15 to 20 min
