INGREDIENTS
1 medium size cauliflower head, divided into bite-size florets, rinsed and drained, and roasted in the oven
1 can (540ml) chickpeas, rinsed and drained, and roasted in the oven
1 tsp. dried oregano, divided
1 tsp. garlic powder, devided
1/8 tsp. kosher salt and a few grinds of black pepper to season the chickpes, same amount to season the cauliflower
1 tsp. olive oil for chickpeas, and same amount for cauliflower
4 small / 2 big roasted red bell peppers, chopped (jarred is fine)
3 tbsp sundried tomatoes, drained if in oil
3-4 brancjes each fresh mint and parsley, chopped
2 tbsp. raw sunflower seeds
DRESSING
1/2 large lemon zest
1/2 large lemon juice
3 cloves garlic, baked
2 tbsp. extra vergin olive oil
1/4 tsp. kosher salt
a few grinds of black pepper
