PSA: make sure ur blender can handle hot liquids without exploding, usually there will be a hot liquid line which is considerably lower down than the normal liquid line to allow for the steam and pressure build up when blending a hot liquid if ur blender has a hole at the top/removable cap then just open the cap then ur good

You could probably wait until the veggies are cooled down and then heat it back up again when it's soup-ified, but that kinda defeats the purpose of keeping things simple.

I was going to buy creamed soups per my Doctor’s list but this is WAY better and not canned 😅 One of the phases in surgery recovery is the purée/full liquids stage and this soup is an easy, tasty meal for that stage. I’d probably only sub the potatoes for cauliflower or lentils or mushrooms. I love her recipes ❤️

Try a cold cucumber soup, melon and lime puree or an iced gazpacho. I'm from Moroccan/ Spanish family we know hot but, use fresh seasonal veggie and fruit soups in heat for light meals. This and red pepper tomato soup would be yummy cold or Borsht.

Do this, but also bake a block of firm tofu or can of garbanzo beans. Both add protein but keeps the silky texture.

@@AshgromIt does, but many people are lactose intolerant and feta cheese is one of cheeses that has the highest amount of lactose. also, tofu is much less calorically dense than feta. so ppl who are lactose intolerant or need to consume less calories, tofu may be the way to go.

I’m not supposed to have potatoes and other dense carbs, so I was trying to think of a way to do this without the potatoes. Maybe I could sub tofu in for the potatoes and maybe even add a little cauliflower to increase the vegetables? Anybody have thoughts on that?

You just open the pouring hole at the top and put a kitchen towel or a paper towel to prevent spills. Been doing it forever and my blender is just fine, and never a burn or anything like that!

Blended soups are some of my favourites. Here's the recipe for one that my family has made for years. On a cookie sheet lined with tin foil and sprayed with a bit of oil, add cauliflower, a shallot or two, and any other leftover veggies you need to use. Sprinkle a fair amount of old bay and roast for a few minutes. Flip, sprinkle with more old bay, and roast some more. Once done (typically when the cauliflower is golden brown), empty into a blender with equal parts chicken stock and heavy whipping cream. Add the stock/cream until the desired texture is reached. Add salt or pepper to taste :]

I plan to try this with the stems cuz inflation is hitting hard and it is starting to become not economical to only eat the flowering parts, probably would need to add a bit more seasoning when it hits the blender if it is just stems :P
