Rump comes from the hind quarter of the cattle, it is the muscle above the hip which works hard making it lean. It is not quite as tender as sirloin which is located beside it so remember to cook it medium to medium-rare as it gets a little chewy when over cooked.
We got our butcher to cut a 1.5-inch thick slice of Wagyu rump, seasoned it with salt and lots of black pepper, seared and sliced it. Arrange beef slices on a bed of your favourite grains (or greens), add veggies and finally drizzle sauce all over. Easy, quick and healthy!
You can use any of your favourite store bought sauces such as teriyaki or bbq too. Or we highly recommend you make your own garlic ponzu sauce by roasting a whole head of garlic wrapped in foil for 40 minutes in 180°C oven, squeeze the sweet aromatic garlic into ponzu sauce and whisk well to combine, easy!
