This was a great new find!!! Per usual, I put my own twist on things with a little added crumble of goat cheese and some fresh basil. YUM!! This tart can be served as a main dish or as an appetizer. Not only is a beautiful to look at, it is super easy to make and insanely tasty! It has all the things...crispy, crunchy, savoring, salty, fresh, creamy...oh my! Give it a try!! Here's what you need to know...
1 sheet of frozen puff pastry - thaw according to the package
1/2-2/3 cup hummus of your choosing
1 yellow bell pepper
1 orange bell pepper
2 zucchini
1 small eggplant
1/2 red onion
1 cup cherry tomatoes
1 T herbs de provence
1-1 1/2 tsp salt
1/2-1 tsp black pepper
2-3 T crumbled goat cheese
1/4 cup fresh basil - cut into thin ribbons
Start with pulling out the puff pastry to thaw (usually takes 30 minutes). Next, chop the veggies into medium sized chunks (3/4-1") and place in a large bowl. Toss with a couple tablespoons of vegetable oil, herbs, salt and pepper. Spread the coated veggies out on a sheet tray lined with parchment paper. Roast at 425 degrees for 25 minutes. Check and stir veggies every 10 minutes or so. Remove and let cool a bit before topping.
When puff pastry is soft enough to unfold, lay it on a cutting board and roll it out a little to smooth the creases. Using a fork, "score" the edges to create a border and then poke the center with the tines of the fork. This is called "docking" the dough and helps it not puff up quite as much (although it'll still puff!). Transfer pastry to a cookie sheet lined with parchment paper. Bake at 425 for 13-15 minutes (double check your brand's instructions for baking time).
Once puff has cooled a little but is still warm, spread hummus in the center square. Top with the veggies that you've let cool a little. I like to go pretty generous with the veggies as they are SO tasty! Lastly, crumble the goat cheese over the top and finish with the fresh basil.
This makes a great meal when paired with a piece of grilled chicken or fish or a simple green salad.
