In this short video clip we are using the SMI AUSSIE KETTLE CONE to create a heat type vortex by burning Gidgee charcoal in the centre of our SMI Oz Kettle BBQ & Fire Pit using the "kettle cone" to contain it. The small opening of the kettle cone is facing upwards and is directing heat centralized and upwards before it swirls around the outer rim. With your produce on the outer grill ring the creation of heat is similar to an air fryer effect resulting in a crispy outer skin yet trapping all the delicious juices inside. Vegetables can be cooked this way too as it allows time for cooking without buring due to the indirect heat applied centrally.
Inverting the kettle cone will make for a larger suface area of heat and can be applied for reverse searing of steaks and the like. You still place the steaks on the outer ring for part of the cook up and when this part is complete finish them off with a direct sear over the centre for a crusy bbq grilled flavour.
Adding flavoured wood chips/chuncks can also be done by placing them on top of the kettle cone for different smokey flavours too.
