The sixth episode in our #rockcakes series, baking parts of the Jurassic Coast, following the weeks of Bake Off. This week features Osmington Mills Mille-feuille for pastry week.

Recipe: Roll out 250g puff pastry thinly into 18 rectangles 9 x 5 cm. Sprinkle with icing sugar and place on baking tray in fridge for 30 mins. Preheat oven to Gas Mark 6 (200 degrees C). Once cooled, bake for 5 minutes. Remove and sprinkle with icing sugar. Bake for another 5 minutes. To make the cream: combine 165 g whipping cream, 25g icing sugar and 2 drops of vanilla extract, whip until stiff peaks form. Fold in lemon zest and juice (1 lemon). To make the chocolate sauce: Heat 165ml double cream until just boiling. Remove from heat. Add 100g chocolate and 25g butter- do not stir immediately but leave to stand. Stir after 5 minutes until combined and smooth. Add 1 tbsp golden syrup and stir. Assemble to resemble the cliffs at Osmington Mills. Add blueberries or chocolate nodules as desired.
