Vom Anfeuern bis zum Backende wird das Brot backen im Steinbackofen gezeigt. Ich backe 10 Roggen-Mischbrote mit Sauerteig. Das Problem beim Holzbackofen ist die richtige Ofen-Temperatur zur richtigen Teigreifezeit zu bekommen.
Bewährt hat sich für mich und meine Ofen-Konstellation das Vorheizen meines Ofens, das lässt mir am Backtag etwas mehr Zeit für meine Vorbereitungen. Das kann ofenspezifisch für meinen Ofen sein. Er hat eine 25cm dicke Ton-/Schamottemörtelkuppel plus Isolierung Keramikwolle und Steinwolle. D.h. er hat ein hohes Speichervolumen. Der Ofeb braucht daher lang zum Auf- und Durchheizen. Speichert dann aber die Hitze über einen sehr langen Zeitraum. Ob die Idee des Einheizens am Vortag für ein Vorteil ist, muss man selbst ausprobieren.
Meine Backküche ist im Keller und der Ofen steht am Ende des Grundstücks. Am Backtag bedeutet das ein permanentes Pendeln zwischen Ofen und Teigzubereitung. Daher bin ich dankbar, wenn ich diesen Weg nicht zu oft machen muss.
Am Drehtag haben wir gute Aussentemperaturen dadurch war nicht nur der Ofen heißer als sonst und hat die Temperatur nicht so schnell abgegeben, auch die Brote reiften schneller als normal. D.h. mit dem Steinbackofen muss man sich immer den aktuellen Gegenbeheiten anpassen - und es wird immer eine neue Herausforderung sein.
Das Roggen-Mischbrot ist angelehnt an das Rezept vom Ketex-Blog, das Kreuzerbrot. Allerdings sind die Mehle und die Zeiten meinen Anforderungen angepasst.

We have good outside temperatures so not only was the oven hotter than usual and did not release the temperature as quickly, but the bread also matured faster than normal.
The mixed bread is based on the recipe from the Ketex blog, the Kreuzerbrot. However, the flours and times are adapted to my requirements.
