Roghan Josh:
Ingredients
Mutton ½ kg
Oil ½ cup
Cloves 3-4
Cinnamon 1 stick
Cardamom 2
Cardamom 1
Bay leaf 1
Black pepper corn 3-4
Whole all spices 1 tbsp
Fennel seeds 1 tsp
Dried ginger ¼ tsp
Ginger garlic paste 1 tbsp
Chili powder 1 tbsp
Salt 1 ½ tsp
Black pepper 1 tsp
Yogurt 1 cup
Green cardamom powder ½ tsp
Saffron ¼ tsp
Water as per need
Water ½ cup
METHOD
• Heat oil, add whole spices, fry for 2 minutes and then add mutton with some water. Fry for 5 minutes.
• Then add ginger garlic paste, chili powder, salt and pepper with grinded fennel, grinded dried ginger powder.
• Then reduce the heat and add yogurt and cardamom powder.
• Keep stirring till it boils.
• Add water, cover and cook till mutton tenders.
• Lastly add saffron, simmer for 5 minutes and serve with nan.
