Recipe for Romanian Grilled Mici
Ingredients:
1 kg mixed ground meat (beef and lamb)
200 ml beef bone broth
1/2 lemon
3 garlic cloves
3 g baking soda
2 tsp thyme
1 tsp sweet paprika powder
1/2 tsp black pepper
1/2 tsp coriander
1/2 tsp cumin
1/4 tsp allspice
1/4 tsp anise
20 g salt
Oil
Instructions:
Mix lemon juice with baking soda.
Press garlic and chop spices.
Add lemon-soda mix and spices to the ground meat, mix with salt.
Knead thoroughly, gradually adding bone broth.
Knead for at least 15 minutes, preferably using a kneading machine.
Cover the meat mixture and let it rest in the refrigerator for 24 hours.
Next day:
Shape small meat rolls with oiled hands (thumb thickness).
Grill over high heat for about 5-6 minutes.
During grilling, brush with a mixture of beef broth, oil, and lemon juice.
Serve with bread or fried potatoes, mustard, and pickles.
