This yummy cake is so light and fluffy and has an amazing tea flavour!
If you also want to make this, I used the recipe below:
Rooibos cake:
Rooibos Syrup:
Ingredients:
650 ml hot water
310ml sugar
2 rooibos tea bags
100 ml brandy
2 tsp vanilla essence
Directions:
In a pot over medium heat add in the hot water, sugar and tea bags, bring to the boil and mix until the sugar has dissolved. Remove the tea bags and add in the brandy and the vanilla essence.
Allow to cool completely.
Vanilla Sponge Cake:
Ingredients:
4 eggs
250 ml sugar
125 ml strong tea
400ml flour
2 tsp baking powder
pinch of salt
30 ml butter
Directions:
Whisk the eggs and the sugar until pale and thick.
Add in the vanilla and the tea.
Add in the baking powder, salt and flour and mix until smooth.
Add in the butter and mix until smooth.
Pour into prepared baking pan and bake at 180 degrees celsius for 40 minutes.
Once your cake comes out of the oven poke holes in it with a fork.
Spoon over the cooled rooibos syrup.
Caramel Frosting:
Ingredients:
250 ml whipped cream
1 tin condensed milk
Directions:
Add the caramel to the whipped cream and mix until well combined.
Place the cooled cake onto a serving dish and add some more of the rooibos syrup on top.
Add the frosting and smooth out.
Grate some white chocolate on top.
Cut into slices and enjoy!
