100 g Glucose Syrup
Method
Put the white chocolate in a glass bowl and put it in the microwave, melt the mixture for 10 seconds at a time then mix and repeat for another 10 seconds until it is well melted.
Then measure the temperature of your chocolate and you have to bring it to 45 degrees max.
Now bring the glucose to 40 degrees and add the two ingredients, mix with a spatula until you get a thick and shiny paste.
Now wrap it in cling film and let it rest for at least 24 hours.
After that time, roll it out on the work table and with a rolling pin flatten it to about 1/2 mm.
Take a pasta bowl or a small glass and cut out some 3 cm diameter disks.
Now use the leftover dough to make a ball with a tip and do what you see in the video.
