Just add lemon juice and water extra. So caramslisation can be avoided.

Guess you have overcooked the sugar syrup. When you do consistency testing, check if the sugar syrup forms thread-like structure for a few seconds in normal water and dissolves slowly. Do not go to the level where syrup forms ball when dropped in water. Hope this helps. Thank you !

Sourness from the lemon will only balance the sweet and also the natural pectin from the citrus fruits esp. lemon helps to set the jam. Hope this helps.

Do you mean water bath or pressure cook the rose petals ? Sorry, I couldn’t understand your question. The way I made, had shelf life of 6 months (refrigerated).

@@TummyTunes no. I mean being able to can/bottle it so it can sit on a shelf as opposed to needing to be in the fridge.

@@erikacampbell169 yeah, it can very well be kept outside in an airtight container. Pls make sure the container is clean and dry before filling and also use dry spoon for every time use.

Just reconstitute the dried rose petals - Soak the dried petals in warm water and once soaked, drain (do not throw the warm water) and follow the sugar lime massaging. Use the same soaked water in making sugar syrup. Please note that dried petals may not have enough fragrance as the fresh does.

I would call that more of a rose candy than a jam. it's so thick, nearly unspreadable.
