SPONGE CAKE:
• 4 eggs
• 100 g of sugar (1/2 cup)
• 120 g of wheat flour (in Poland type 450) (3/4 cup)
• 40 g of potato starch (less than 1/3 cup)
• 2 tablespoons of oil or butter
• 5 g baking powder (optional) (1/2 teaspoon)
Mold dimensions: 25 cm x 30 cm
Preheat the oven to 180°C.
Bake for about 30 - 35 minutes. at 150°C on the lower shelf of the oven.
After baking, leave the cake in the oven for 15 minutes. with the door ajar
APPLE MOUSSE FOR CAKE:
• 2,100 g apples (Granny Smith, Golden, Renette, Antonówka, Geneva, Gloser)
• 100 g of sugar (1/2 cup)
• 18 g of gelatin leaves and 1 cup of water
• cinnamon optional
• juice of 2 lemons
(optional instead of gelatin - 2 lemon or peach jelly)
WHIPPED CREAM
• 800 g of cold cream 38%
• 80 g of powdered sugar (2/3 cup)
