In this episode, Habiba cooked a royal turkey tajine that her grandmother was cooking for the king of Morocco. I met with Habiba in the old suburb of Marrakesh. Habiba and I have travelled to one of the villages around Atlas mountain to buy an organic-raised turkey from 14 year old Abdullah.

Royal Turkey Tajine with Saffron, Lemon and Olives
Ingredients
For the marinade:
1 whole turkey cut into peices
2 teaspoon powdered ginger, cumin, turmeric
1 teaspoon ground black pepper
2 teaspoons powdered saffron colour or one big pinch of saffron threads ground up with a pinch of salt
6 cloves of garlic finely chopped - a zester grated works well for this
1 preserved lemon with seeds removed, pulled into quarters
1 tablespoon vegetable oil
2 tablespoons olive oil
2 heaped tablespoons of preserved (fermented) butter or regular butter
For the pot:
1 large onion, chopped
1 cup of water
For the royal finish:
1-2 cups of pitted green olives (Marinated green olives might taste best for this dish but try before you buy!)
Mix the ingredients for the marinade together and rub all over the turkey pieces, making them golden in colour.
In a large pot, add the turkey, onion and water. Place on a med heat and simmer rapidly, checking occasionally to turn the meat over, until the turkey is cooked and falling off the bone.
In a medium saucepan, warm the olives with a little stock or water. This will help the olives soften and release their lemony piquant flavour.
Now, to assemble.
If you have a tajine to use, warm it up over low heat. Add the turkey and olives to the tajine and cover it for 5-10mins. This will allow the steam to bring the flavours together. Serve in the tajine with fresh bread.
Alternatively, add the olives to the saucepan of turkey and give it another 5-10mins over low heat to infuse. On to a large serving platter or dish, serve the turkey with olives and sauce drizzled over the top. Enjoy with fresh fluffy bread, the way the Moroccans do, or with your own preferred sides for the festive season.
