Pigeon Milk Souffle and Herring Under Fur Coat, hmmm... Now the beef tongue in gelatin is classic. Tongue is quite expensive here. The preparation is quite difficult if you are accustomed to it: the key is to scrape off the taste buds while conserving the meat. The easiest method is to blanch, but not for long. The next difficulty is timing the boil. Too long and it is too hard, too short and the outside soft while the inside is raw, and from this you cannot recover. Also, beef tongues are over four pounds here, so you have to give it away to friends or have a large family. Reheating it is difficult without overcooking, where the unique softness is lost. When right bit melts in the mouth.
@alexanderkuptsov6117

>>The preparation is quite difficult if you are accustomed to it: the key is to scrape off the taste buds while conserving the meat. Hm, you don't have to scrape anything, you just boil it, some people change the water 2 or even 3 times, also they add bae leaf (very popular in Russia), whole peppers, maybe even carrots and onions. I wouldn't call the prep very difficult since you just boil the thing. The longest it took me was 3 hours. And yes, peeling it aftewards might be a challenge. Also, the bad thing about the cow tongue is that it doesn't do well in the fridge: next day it's tougher and loses its taste.
@racingsquirrel238
10 ай бұрын
@@alexanderkuptsov6117 Agreed on scraping being antiquated. The post says 'the easiest method is to blanch,' e.g. boil and peel. In the Cantonese cooking, black soy and/or Chinese marinade (specific products), rock sugar, and star anise are used with an after prep reduction in the boiling liquid to utilize the collagen coming from the tongue. That connective material plus the added sucrose makes for a nice looking demi glaze.

To be honest lot of the europeen (excepted France) food is really different, it's like if it were from a very different type,for us in all america (continent),in all asia and the rest. There are things that look special or not really from my type. The important is the taste. I'm getting used to some kind of new things that I never really liked before. Sometimes you would have to eat a lot of food a bit different from an other country,for then to appreciate. (Maybe it could be cause of the way (order) of eating the ingredients) Sometimes when you travel to an other country it's after that you will start thinking about the food and getting interested about the country.

This is cantine there is no super famous principal plates. In Canada cantine it's more in "jailing" centers,like a department where people can eat,or it could be from stores from others countries making their special food,here they would mostly make buffet restaurants if it's for commercial purposes in the city. Those are restaurants that you pay to enter and you can eat whatever you want with no limit,the only thing is that you can't bring back food. Me my problem is that my appetite is different those times.

The word "гречиха", I guess she didn't know in English. It's buckwheat.
