[RECIPE IN THIS DESCRIPTION] Rutabaga/Swede Mash.
Rutabaga (aka Swede in England) is one of the few root vegetables that has relatively low carbs.
This recipe is creamy and buttery with that slight bitter taste that comes from Rutabaga. It's super easy to make and pairs really well with red meat - I love to have mine with lamb chops.

INGREDIENTS:
- 500g (1kg) Rutabaga/Swede, peeled and cut into cubes
- 3 tbsp Salted Butter
- 1 tbsp Cream
- Salt & Pepper, to taste
METHOD:
1. In a large saucepan, over medium heat, add the rutabaga and enough water to just cover it. Bring to a boil and leave boiling for 20 minutes.
2. Drain the water, and set the rutabaga aside (I set mine aside in a large bowl to use the same saucepan for the next step).
3. In a large saucepan, over medium heat, the butter and cream. Let the butter melt, stirring occasionally to prevent burning.
4. Add the cooked rutabaga and toss to coat with the butter/cream mixture. Then, mash to your preferred consistency, adding another splash of cream (if required) and salt & pepper to taste.
5. Serve and enjoy.
