Methi Muthiya
Wheat Flour(गेहूं का आटा) - 1 Cup
Gram Flour(बेसन) - 1/2 Cup
Fenugreek (मेथी) - 1 Cup
Green Chili (हरी मिर्च) - finely Chopped
Spring Onion(हरी प्याज) - Some
White Sesame(सफेद तिल) - 1 Spoon
Carom Seeds(अजवाइन) - 1 Spoon
Asafoetida (हींग ) - 1/4 Tsp
Sugar Powder(पिसी चीनी) - 1 Spoon
Turmeric powder (हल्दी पाउडर) - Some
Salt (नमक ) - Some
Baking Soda(मीठा सोडा) - 1/4 Tsp
Lemon Juice(नींबू का रस) - 1
Water(पानी) - As Required
Oil(तेल) - For Frying
For Undiyo
White Sesame(सफेद तिल) - 2 Tbsp
Carom Seeds(अजवाइन) - 1 Tbsp
Asafoetida (हींग ) - 1/2 Spoon
Fresh Coconut(ताजा नारियल) - 1
Coriander Leaves (हरा धनिया) - 1 Cup
Green Garlic(हरा लहसुन) - 1/2 Cup
Green Chili (हरी मिर्च) - 5-7
Ginger(अदरक) - 2 Inch*-
Coriander Powder (धनिया पाउडर) - 2 Spoon
Roasted Cumin Powder (भुना जीरा पाउडर) - 1 Spoon
Fennel Powder(सौंफ पाउडर) - 1 Spoon
Garm Masala(गरम मसाला) - 1 Spoon
Oil(तेल) - 3-4 Spoon
Sugar Powder(पिसी चीनी) - 1 Spoon
Peanut(मूंगफली) - 1/4 Cup
White Sesame/Carom Seeds(तिल-अजवाइन पाउडर)
Coriander Leaves(हरा धनिया) - 1 Cup
Ginger(अदरक) - 1 Inch
Salt (नमक ) - As Per Taste
Turmeric powder (हल्दी पाउडर) - Some
Potatoes(आलू) - 5-6
Sweet Potato(शकरकंद) - 1
Purple Yam(बैंगनी रतालू) - 1
Oil(तेल) - Some
Asafoetida (हींग ) - 1/2 Spoon
White Sesame/Carom Seeds(तिल-अजवाइन पाउडर)
Dry red chilly (सूखी लाल मिर्च ) - 1
Flat Beans(सुरती पापड़ी) - Some
Valor(हरी बीन्स) - Some
Valor Seeds(हरी बीन्स बीज) - Some
Peas(मटर) - Some
Green Paste(हरा पेस्ट)
Water(पानी)
Small Brinjal/Eggplant(बैंगन) - 7-8
Banana(केला) - 2
Green Chili (हरी मिर्च) - 5-7
Green Paste(हरा पेस्ट)
Oil(तेल) - 2 Serving Spoon
White Sesame/Carom Seeds(तिल-अजवाइन पाउडर) - Some
Tamarind-Jaggery Pulp (इमली गुड़ का पल्प) - 1 Cup
Green Paste(हरा पेस्ट)
Fresh Coconut(ताजा नारियल) - For Garnishing
✍🏻RECIPE:
For Muthiya: in a big bowl put, Wheat Flour, Gram Flour, Fenugreek, Green Chili, Spring Onion, White Sesame, Carom Seeds, Asafoetida, Sugar Powder, Turmeric powder, Salt, Baking Soda, and Lemon Juice mix it well & Make a dough with the help of Water
For Sesame powder: In a mixing jar, White Sesame, Carom Seeds, and Asafoetida Grind it well.
Keep a pan, on the flame then put, in Asafoetida, White Sesame/Carom Seeds, Dry red chilly, roast it then adds Valor, Valor Seeds, Peas, Green Paste, and Water and mix it. then slow fry wrap Brinjal, Green Paste, Sweet Potato, Purple Yam, Tamarind-Jaggery Pulp, then add Banana, fry Muthiya, Green chili, and Fresh Coconut cook it well. then serve it and garnish it with fresh coconut
