RECIPE BELOW: This home-style claypot braised pork belly super tender with a rich earthy savory flavor from the soy sauce and a slight sweetness from the chestnuts, goji berries, garlic and rock sugar. It's a wonderful autumn-winter dish! ENJOY!
Serves 6-8
Ingredients:
• 2# pork belly
• 8 cloves garlic, crushed
• 1" knob ginger, sliced
• 10 oz or more ~30 or more Chestnuts-fresh-remove peel & skin/dried-soak 30 mins hot water
• 2 Tbsp dried Goji berries
• 3 star anise
• 1 cinnamon stick
• 3 Tbsp Shaoxing wine
• 1 Tbsp sesame oil
• 1/2 C soy sauce

• 1/2 Tsp black pepper
• ~2 oz or 1-2 block rock sugar or 1 Tbsp brown or regular sugar-more or less to taste
• 1 Qt chicken stock
• 4 green onions, cut in quarters
• Cornstarch slurry (3 Tbsp cornstarch mixed with 6 Tbsp water) or more as needed to desired thickness
• 8 oz Shanghai bok choy or reg bok choy/spinach/cabbage
Marinade:
• 2-2.5 Tbsp dark soy
