RECIPE BELOW: The soup has a rich beefy earthy mellow flavor and the slow cooked oxtails are super tender and slightly gelatinous along with a silky texture. The lotus roots are sweet with a slight crisp starchy texture and they easily absorb all the flavors of the stock. The peanuts add a bit of extra protein and a light crunch. This star anise adds a hint of licorice and the tangerine peels infuses the light broth with a citrus aroma. These dried ingredients add a wonderful back note without overpowering the overall taste. The addition of the onion and ginger helps mellow out the beefiness of the oxtails. The crisp mustard greens add a peppery, bitter and somewhat spicy bite, it's a wonderful contrast to the richness of the beef. Oxtail have a good amount of collagen which is great for your skin. Ingredients:
• 3.5-4# oxtail, cut
• 1# Lotus roots, cut & sliced
• 1/2-3/4# Chinese mustard greens stems, sliced
• 1 yellow onion-quartered
• 1.5" knob ginger, sliced
• 2 green onions, sliced diagonal
• Sm bunch cilantro plus stems, rough chop
• 2 star anise
• 1/2 C raw skinless peanuts
• 1 large or 2-3 sm pc tangerine peel
• 2 qt chicken/pork stock
• 1 qt more or less wateenough to cover ingredients+1" over
