How to make Sablée Dough: Viennese cookies or Petit Fours for tea. In this video you will be able to learn how to make sablée doughs with a pastry bag, to make them in different ways and I show you some decorations so you can choose and make at home. We are going to make dough dipped in chocolate, dough with glaze, and dough filled with dulce de leche. Here are the ingredients of the recipe:
Ingredients:
360 gr butter
200 gr icing sugar
1 tbsp vanilla essence
2 eggs
2 gr fine salt
400 gr flour 0000 (all purpose)
100 gr corn starch
30 gr bitter cocoa
For decoration:
almonds, peanut crunch, pistachios, colored grana, cereals covered with chocolate, etc.
Glazed:
1 egg white, 250 gr icing sugar, lemon juice each
Colorant
100 gr Semi-sweet chocolate (no tempered needed)
100 gr white chocolate (no tempered needed)
⚠️ I forgot to tell you that before putting them in the oven it is better to let them rest in the refrigerator for about 30 min. ⚠️
