My sugar-free saffron pastry cream is a luxurious delight for the senses. This is a classic pastry cream recipe but without any refined sugar and, instead of vanilla, I used saffron to give it an exquisite oriental aroma.
Saffron is the most expensive spice in the world but it isn't for everyone. You either like it or you don't. I happen to love it!
Just make sure you invest in the very best red saffron you can find. And I say "invest" because it's an investment in your well-being. Don't buy cheap saffron! If it's cheap, it's not saffron.
Another tip: The threads should look like tiny trumpets.

Ingredients
some saffron strands
1 tbsp. water (boiling)
4 yolks
20 g cornstarch
60 g xylitol
320 ml milk
40 g butter
Directions
1. Use a mortar and pestle to grind some saffron strands to a fine powder. Add a tablespoon of boiling water, give the saffron powder a stir, and let it steep.
2. Mix the yolks with the cornstarch and then add the xylitol. Mix very well until the mixture increases in volume and lightens in color.
3. Pour the steeped saffron into the milk and bring it to a gentle simmer. Pour the milk in a thin thread into the yolk mixture while whisking constantly. After half of the milk has been added like this, the remaining half can be added all at once.
4. Return the mixture to the pot and put it on a small to medium flame. Mix constantly. At first, it will start to curdle, but as you mix it comes together into a glossy, shiny cream. As soon as it's completely thickened and there is no liquid left, remove it from the heat and push it through a strainer over the cold butter.
5. Mix very well and you'll have an even glossier cream. Cover it directly on the surface with plastic wrap, let it cool down to room temperature, and then refrigerate it for at least 4 hours.
6. Before you use it, stir the sugar-free saffron pastry cream with a whisk or a spatula. Fill a piping bag fitted with a tip you like and use it to decorate cupcakes, cakes, fill tarts, and tartlets or even serve it as a stand-alone dessert. It's absolutely amazing! Enjoy!
