Ingredients:
500g of salmon fillet
2 crushed garlic cloves
1 finely chopped onion
2 finely chopped green onions
A little chopped parsley or cilantro
Salt and pepper to taste
1 small breadcrumbs
2 spoon of olive oil
2 beaten eggs
Breadcrumbs
Frying oil
Preparation:
Place the salmon fillet cut in three, put in an oven-proof container, season with a little salt and about two tablespoons of olive oil. Bake for 10 minutes.
Remove from the oven and grind with a fork, season with 2 cloves of crushed garlic, 1 finely chopped onion, 2 finely chopped green onions, 1 egg and a little chopped parsley and coriander, salt and black pepper to taste. Mix well, add 1 small freshly grated bread and mold the croquettes, pass the beaten eggs and breadcrumbs. Fry them in hot oil.
These croquettes can be freezes up to three months.
