Correct me if I'm wrong but doesn't the acid from the lemon used when making mayo essentially cooks the egg chemically? That's why it's usually safe

Want to make homemade mayonnaise but are worried about salmonella? First, why do raw eggs cause salmonella? It’s basically bird droppings on the shell of the egg. When you crack an egg some of the droppings may contaminate the egg. That’s is why we are urged to cook our eggs thoroughly, so that no yolk remains and any bacteria is cooked/killed. Some but not all store bought eggs are pasteurized or washed to remove the droppings and eliminate/decrease the risk of salmonella. Read your carton to see if your eggs have been pasteurized. If they have not been you can do a simple ‘heated’ bath to pasteurize your own eggs at home. Simply place your room temperature egg in a pot, in your sink with the water reading at 140*F. This temperature will not cook the egg but 141.*F will. Heed caution!!! It is important to maintain the temperature at 140*F for 5 minutes, to ‘kill’ off the droppings or potential salmonella. Do this by using a sous vide or by simply splashing very hot splashes of water into the pot with the egg. It’s important to watch the temperature closely. If you see it dropping add more hot water. If you see it rising too high add a splash of cold water. After 5 minutes the egg should be clean of most risk. Place egg in a cold bath and use right away or keep refrigerated. There is still a small risk of salmonella poisoning due to the fact that salmonella can be present on the inside of the egg. This can happen if the hen had a contaminated reproductive tract when she formed the egg. (This is true for all eggs.
