Lovely to hear your girls. You’re right keep them off camera. Reminds me of laughing with my dad. Bernie Inn used to be my dad’s favourite back in the day, famous for their steaks. . My mum and dad stayed at them on weekend breaks. Dad was a real steak man, but it had to be well done.

It is really good value for what you are getting - as you say, a treat. My local butcher does sell T-bone steaks, but they are a lot dearer. Mind you, they are Scotch beef and matured longer, so maybe not a fair comparison. I remember being taken on a date to a steakhouse years ago. When I came home and told Dad that my date had ordered a T-bone steak, Dad was very impressed. I won’t say he immediately started making the wedding preparations, but it was close! I think he was more disappointed than I was when we broke up! 😀

Gareth, that's a very good price for a T-Bone Steak although yes it's a thin cut and liable to dry out if cooked as a thicker cut should be. My preference is that pre-marinated meat should be avoided, same goes for pre-salted. The best choice beef is a cow that has been grass fed which is hard to get but some farms will have and sell it. Salt with a fine sea salt, leave in a fridge for around 12 hours, it will change to a darker colour and the salt will help tenderise the meat. Then you coat all sides with a bit more salt, cracked black pepper, some olive oil in a pan then sear on all sides using tongs for the sides and flipping the steak, at the last few minutes in goes unsalted butter, preferably fresh Thyme, basting all sides, allow to stand, then cut across the grain.

Grass fed cattle make leaner steaks, I grew up on a farm and we had beef cattle and milk cows. We used to feed our cows a diet of grass and feed (Sweet feed for the calves), sweet molasses and salt licks, the cows would grow larger and have meat with a lot of fat and marbling in it. Same goes for pork, the slop fed pigs had fattier meat and the purely grain fed had leaner cuts.

Not if you cook for a short time, if you leave it cooking too long the oil becomes lighter in colour and unhealthy, searing is not to cook the meat, just to give it a crust the ideal would be to grill the steak, however steak can also be slow cooked or casseroled, depends on what taste you want and how healthy you want it to be for you, the bone adds flavour and nutrition to a casserole for example but for this you might as well use cheaper rump steak that has been marinated overnight @TheGamesEmporium

You should have tried both sides at T-Bones are Sirloin on the large cut and Fillet steak on the smaller cut and the fillet should be the tastier, keep up the great channel.

Cast iron skillet, ripping hot, (no oil) sear steak on all sides until darkened (about 1 minute), add a teaspoon of water and a teaspoon of butter on top and immediately place a pot lid on top and remove from the hob (use the underside of your chopping board as a trivet) wait 10 minutes, done 😚👌🏻. £10.50😮, that is a treat, "sheer luxury Jeeves" as my owl fella likes to say.

You don't need the pan to be ripping hot. and you only darken the meat, when you get the heat to transfer to the surface of the meat. Oil helps with that, especially if the steak is thin and uneven like this one.

Still lots of good steak in the UK. Nothing compares with the steaks I was getting during the pandemic as no restaurants to buy the high end cuts. My butcher mate kept me well supplied. I won't buy Argentine beef on principle, nor their wine.

Hi! I'm currently sound designer for a local play. the song list called for "Salt" by the band "Moss". I went through a website to download this song off of Spotify and it downloaded your video! You've just lowered the temp of pan by adding oil and butter at that point. Only add butter for the last couple of mins otherwise you end up boiling the steak rather than fry

My meat has to be cooked to shoe leather consistency. No pink at all. I grew up with my meat like this so our whole family has it like that 😂😂. Grew up in country Australia, no such thing as gourmet cooking or thermometers. Bye girls. 😊

Yes you lower the temp slightly, but that won't "boil" the steak. Firstly, you don't add water with oil and very little with butter. Secondly the Maillard Reaction (browning) that you want starts at 140 C surfistemp of the steak. Putting some Butter around a cast iron pan that is probably above 200 degrees doesn't lower the temp of the pan that much. Thirdly, you don't need the highest temp possible to cook your steak medium or rare with a nice crust. The most important thing is to get the heat of the pan to the surface of the meat and oil/ butter help with that immensely. You don't boil the steak you fry it.

@@DaleSteel No it doesn't not at these temperatures. You can hear it frying. "Trust me" is not a well founded response to the physical reality of the temperatures. The issue why there wasn't even browning in this video is too little fat. You can see how the steak bulges upward and therefore has no contact with the high heat of the pan anymore. Fat would transport the high heat into the gaps. The gaps were increased by the bone in the middle since it can't deform. The butter burned immediately showing how fast it took on the temperature of the pan. Cooling down and boiling wasn't the issue.

Well done, looks perfect. I am always over cooking Steak if it's thin . your Steak looked Perfect, They say to take it out of the packet, season it and leave it in the Fridge for 24 Hours and then bring it to room temp before cooking. the cooks have so many tips for Steak its crazy . Yours is as good as it gets.

I just had to read these comments and I think you got away with your steak cooking skills lightly, The best part about a sirloin is it's got it's own ridge of fat, heat the pan HOT and hold the steak sideways and render the fat on the side down, Now you have the perfect frying oil right there and a crispy edge to the sirloin. Love your work ❤

Other than Osso Bucco (shin) I reckon the T Bone is the best of beef bone in cut. That's great the girls got involved in the cooking process and sampled the finished product. A lesson for us all. When the Lottery Cheque clears I'm gonna open a chain of restaurants to be called " Nostalgia Eateries and they will become a national treasure. Starter's. Prawn Cocktail, Melon, fruit juice & Pate with melba toast.Mains Steak,Rump, Sirloin, T-bone, and 1/2 a spit roasted chicken,Gammon steak ,egg or pineapple. Desserts. Black Forest Gataeux, strawberries. And back in the room. Tip,never oil the pan. Oil the steak( or chops).Being honest mate,only needed the chips, 1/2 a grilled tomato, mushrooms (6 to 8) peas and my tea would be ready. Very well cooked. when i was in the 6th form (1987) i worked in the county thistle hotel (newcastle) and the chefs were always taking food home... i decided once to take a t bone steak home haha...wrapped it up in a towel and took it outside the back with some rubbish, and come the end of my shift I'd take a black bag out and grab it...then some drunk bloke was having a slash in the back lane / car park and i had a bit of craic on with him, and i asked him if he wanted to buy a steak, he said yes...i opened the towel up and the night duty manager came out (to see what all the noise was..) and saw us, i told him it was rubbish for the bin, but he took it back inside...i didn't bother going back to the hotel after that..

That looks a belter of a steak. Always oil the meat when searing, not the pan. Heat the pan up first until the cast iron handle is too hot to hold. For a steak that thick in a ripping cast iron pan cook for 60 seconds, turn cook for 60 seconds, turn cook for 30 seconds and then turn for another 30seconds. Get some foil and add butter then add the steak and let it rest for a couple of minutes.

As a grill chief taught us in the states, add the salt and pepper once the meat is seared to avoid the salt from sucking all the moisture from the meat, and to stop the pepper from burning. And a big no no is never add butter to a red hot cast iron pan, butter burns and makes the meat taste rancid. In fact there's no need to add butter at all, when the meat has rested in said pan the juices will naturally run out, spoon this back over the meat before serving.

As BFG alluded to, in UK we were advised not to eat beef "on the bone" during the BSE crisis back in the '90s. I guess we never got back into the habit of eating it since.

There seems to a lot of Irish meat in the shops at the moment, at first i was convinced this t-bone was from the Republic of Ireland but when you look closer its from Northern Ireland which is part of the UK, technically not GB but i thought it would have been labellled UK beef because it's come from inside the UK and not the ROI/EU. I had a delivery from Tesco on Saturday of fresh diced beef and was surprised to see it labelled "Irish Diced Beef", normally we only get Scottish Beef here when ordering fresh beef... just had another look at the packaging and this time it is from the Republic of Ireland, Dublin. Makes me wonder if the recent changes to the post-brexit agreement between the EU and the UK about Northern Ireland border checks on goods are now filtering through and that the packaging will eventually settle down to have clearer packaging about what is from the ROI/EU, and what is from the UK.

Its cooked perfectly but i was a butcher in the 80s for Dewhurst and the best steak was chine of beef also named forerib its called a butcher's cut as it what they take home for themselves ask your local butcher's to cut you a steak off you'll love it 😊

I don’t think it’s spoilt,but I do think if you couldn’t see the steak,and a piece of medium,to medium rare steak was fed to you,and a piece of well done meat was fed to you,you would choose the medium steak every time over the well done. When people say they like it well done,they always say they don’t want to see any red which they usually think is blood,but is hemoglobin a watery protein.That being said enjoy your meat as you like it Linda.😊

You've got to use clarified butter, it gives you a higher temperature sear making the the protein caramelize, without the butter burning.

I pay the about the same from the butchers , recently went to Aldi 2 for £7 and it was actually better than the butchers cut.

Hi Gareth,on steak try the aldi sea salt and black pepper grinders, they are ace bud and not expensive.

Don’t add butter until the end mate as it will just burn. Watch guga foods and he will teach ya how to do a steak properly. Salt, pepper and garlic powder to season.

hi gaz good review ,you would easily pay between 30 to 40 quid for a t bone in a decent restaurant be a bit thicker though keep up the good work mate 😁

Hi I just watched this and just a suggestion that meat never tastes good with resting juices on the plate, but if you like it that's ok, and it's your first time trying it. Good video

First time cooking a t bone I've had plenty. Yes you have to keep the juices pour them over the meat. Don't waste the goodness. Look it up. Cheers

That steak looks absolutely delicious. Not sure if you have the same service where you are, but here in the States the option exists to buy a quarter, half, or whole cow at once. It is a huge investment up front but, it averages out to really cheap meat per pound, I ate for two years and gave away tons of meat to family, friends and neighbors from a single cow (Not really a single cow, just the equivalent in meat). Some of my family and friends, go in shares on a butchered animal, it saves a lot of money. Again, not sure if that is a thing there.

That looks good Gareth im surprised that has not got a Security Tag on it as most of the steak i get from ASDA have them and although they get scanned and paid for i still ring out the exit to the shop security just wave me through! I would think some good chips and peas or maybe an egg would go well with it. Marc in Bletchley.

It's genuinely intriguing hearing you say and reading the comments that a t-bone steak is almost like a relic from the past? Is it not a usual cut of meat in English shops and butchers? In Australia, t-bone is very common.

Sear both sides before basting and no need for the oven with a thin steak like that just make sure its room temperature before cooking.

Its a tenner but it looks like a good bit of beef, nice bit of fat and looked like it cut like butter, full of flavour and now full of envy :).

Try the steak from home bargains. £2.79 for an 8oz rump. A £1 cheaper than Aldi & generally nicer.

Nice. Glad you have done T-Bone. I've got 2 in the freezer my son got me from the butchers. And now thanks to you I will be able to cook them properly.

Its abit big for 1 normal person, but you could slice it for 2 easily enough.
