Salted pork bone soup with soybean and leaf mustard

芥菜黃豆鹹豬骨湯
材料:
芥菜一斤
黃豆2兩
急凍排骨一磅
鹹蛋一隻
薑一小舊
處理:
1. 排骨,清水解凍。
2. 黃豆,清水浸一小時。
3. 排骨已解凍,倒去水分,加入粗鹽一湯匙,乸一小時,去除雪味、腥味,及加入少許鹹味。
4. 排骨,清水沖洗乾淨,擎乾水,放碟上。
5. 黃豆,清水沖洗乾淨,擎乾水。
6. 芥菜,切細塊,清水洗乾淨。
7. 薑,去皮,拍鬆。
8. 鹹蛋,打在碗內。
烹調:
1. 大火在鑊內燒熱油一湯匙。
2. 另一邊,煲滾清水一升半。
3. 鹹蛋白,煎香,放上碟。
4. 排骨,煎香,加入薑。
5. 加入黃豆,炒香。
6. 轉慢火,放鹹蛋黃在鑊中心煎香,切細粒,炒勻,同時加入鹹蛋白。
7. 加入滾水一升半,冚蓋,大火滾10分鐘。
8. 加入芥菜,滾7分鐘。
9. 完成,倒入大碗內。
10. 可享用。
Salted pork bone soup with soybean and leaf mustard
Ingredients:
Leaf mustard 1 catty
Soybean 2 taels
Frozen pork bone 1 lb
Salted egg 1 No.
Ginger (small) 1 No.
Preparation:
1. Pork, defrost in tap water.
2. Soybean, soak in tap water for an hour.
3. Pork has been defrosted, pour away water. Add in 1 tbsp of cooking salt, season for an hour, to remove unpleasant smells and add some salty tastes to it.
4. Pork, rinse thoroughly. Drain. Put on plate.
5. Soybean, rinse thoroughly. Drain.
6. Leaf mustard, cut in small pieces. Rinse with tap water.
7. Ginger, get it peeled. Beat well.
8. Salted egg, break in a bowl.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. On the other side, boil up 1.5L of water.
3. Salted egg white, fry well. Put on plate.
4. Pork, fry well. Add in ginger.
5. Add in soybean, fry well.
6. Turn to low flame, put salted egg yolk at the centre of the wok. Cut in small cubes. Fry well. Add in salted egg white at the same time.
7. Add in 1.5L of boiled-up water. Cover up the wok. Boil at high flame for 10 minutes.
8. Add in leaf mustard, boil for 7 minutes.
9. Complete. Pour into a big bowl.
10. Serve.
