San Lou Beehoon 三楼米粉 or burnt beehoon is a dish that you can normally only find in Johor Bahru. It's my wife's favourite after I brought her to try. Basically it's a fried beehoon but taken to the next level by further char both side of the beehoon for some time by flipping and tossing the beehoon in the hot wok. Somehow, through this process, it makes the flavour and the aroma so much deeper. So It's a fried beehoon with deep deep flavours, u will only know after trying it. Now this beehoon will looks much nicer if you are good in tossing wok, which Ah Pa doesn't know how to, haha. So Ah Pa's version doesn't look so good, but i can assure you the flavour is still very good! If you are also not so good with tossing the wok, then you need to be extra careful when you are doing it my way, if not careful enough, we can be get burnt from the edge of the wok. One tips is to cook a smaller amount using a smaller wok, then use a larger plate to flip.
Ingredients:
3 A1 Bee Hoon
1 chicken egg
Some cabbage, sliced
1 clove of chopped garlic
Some fried fish cake
Some pork meat (sliced), marinated with light soya sauce and Shaoxing wine
Homemade fried garlic oil or shallot oil
Seasoning:
Homemade chicken powder (diluted with filtered water)
1 tablespoon of oyster sauce
1 round of light soya sauce
Right amount of dark soya sauce
Pinch of salt
Pinch of sugar
Few dashes of white pepper
Homemade fried garlic oil
