Serves 4
Ingredients:-
200g fish fillet (salmon, rosada, hake)
Small cup basmati rice cooked in vegetable stock
2 sliced hard boiled eggs
1 small onion finely chopped
200g chopped mushrooms
1tsp lemon zest
1tbs lemon juice
2tbs cream.
50g butter
2 bay leaves
2tsp parsley
Salt and pepper to taste.
2 large rectangular sheets puff pastry
Beaten egg for glazing
Method:-
Melt the butter in a large frying pan and add the onions and mushrooms.
Sauté until well cooked and just starting to turn colour.
Add the herbs, lemon juice and lemon zest and cook for a couple on mins.
Then add the cream and the rice.
Mix well and add the fish. Continue to cook until the fish is just about cooked. Check for
seasoning.
Allow to cool for 15 mins and then add the sliced egg and mix well.
Place one sheet of pastry onto a baking sheet and place the mixture evenly on top, leaving space
around the edges to seal the pastry.
Dampen the edges of the pastry and Place the other sheet on top.
Press firmly around the edges and trim.
Crimp together with a fork.
Glaze with beaten egg and make some slits on the top of the pastry.
Bake in a pre-heated oven for about 20 mins.
Serve with salad and sour cream or green vegetables
