Chicken Mandi, Kibbeh, Kabsa, and all such has become my favourite after I came to Saudi Arabia. I have been living in Qatar and UAE for many years. Those are beautiful countries I must say. But there is certainly a difference in the authenticity and tradition the is food prepared and served.
I was not a fan of Mandi all my years until I landed in Saudi Arabia. Might be because I hadn’t eaten Mandi at an Arab’s house where they prepare traditionally.
Here in Saudi Arabia, the taste and flavour is just divine. I never liked to prepare Mandi at home because why do I have to when I get best Mandis from the restaurant.
But in this video I have prepared the most easiest and the most flavourful Mandi of my life.
Traditionally this dish is prepared in an oven, that’s underground and they cover it locking the smoke and flavour. That would be something really different in taste.
For a similar taste, I have prepared in an oven and smoking technique to add those smoky flavour.

1. Chickpeas - 2 cups soaked overnight with 1 tsp baking soda

1. Minced meat - 500 gm
2. Onion - 2 small chopped

2. Basmati rice - 3 cups
3. Hot water - 4.5 cup ( For every 1 cup rice add 1.5 cup water )

7. Salt - 1.5 tbsp
8. Raisins - 1/2 cup
9. Fried onion, cashews and coriander leaves - for garnish
SALSA :
1. Green chillies - 3

5. Vinegar - 4 tbsp
